Very Blueberry Muffins
Its been a while since I updated, mostly because I haven't really been baking or eating out much, but here's the recipe for very blueberry muffins. (taken from some recipe books/sites but with my own twist on some things.)

Very Blueberry Muffins
Blueberry muffins are probably one of the best muffins that I personally enjoy eating. This tender, moist version is really extraordinary! The recipe calls for a sprinkle of sugar at the end for a crunchy, sweet top which is something I neglected to do, but even without the sprinkle, it tastes great as breakfast or a snack throughout the day.
INGREDIENTS
1 3/4 cup all-purpose flour
2 teaspoons baking powder
0.5 - 1 teaspoons kosher salt
3/4 cup granulated sugar, plus 2 teaspoons for topping muffins
1 stick of butter, melted
1/2 cup heavy cream
2 large eggs (I have small eggs, so I ended up using 3 small eggs)
1 tablespoon vanilla extract
2 cups fresh or frozen blueberries (i just dropped in as many blueberries as I thought wasn't overload)

1 stick of butter, melted
1/2 cup heavy cream

2 cups fresh or frozen blueberries (i just dropped in as many blueberries as I thought wasn't overload)
INSTRUCTIONS
- Heat oven to 400°F. Place cupcake liners in you muffin pan. Butter the wells if you don't have cupcake liners (I find cupcake liners work the best) Set the pan aside.
- Whisk together flour, baking powder, and salt in a large bowl to break up lumps and aerate mixture; set aside.
- Whisk together 3/4 cup of the sugar, butter, cream, eggs, and vanilla extract in a medium bowl until smooth. Add sugar mixture and blueberries to flour mixture and stir until just evenly mixed (a few lumps will remain), about 30 strokes. (Do not overmix; the batter should be thick, but the ingredients should be evenly incorporated.)
- Fill the muffin wells completely and evenly sprinkle remaining 2 teaspoons sugar over top. Bake until a toothpick inserted in the center comes out clean, about 20 minutes. Set the pan on a wire rack and let muffins cool in pan for 5 minutes. Remove muffins from pan and serve.

aw so cute and delicious looking! i'm currently on a somewhat vegan mini diet, no sweets allowed, but as soon as that's over, I must try to make these muffins! And no worries about the cake recipe :)
All the cakes/brownies I made a while ago disappeared before I took pics, but they weren't that pretty anyway :P and I made new cupcakes today!
